We have spent a fortune buying fruit jelly snacks for our little lady. At the time it was a good way to make sure she was getting the benefits of fruit when she wouldn't eat the real thing. A friend of mine had told me about homemade fruit gums, she’d found a recipe online so I thought I would give it a try. The recipe is so simple you really can't go wrong. The first time I tried these I used shop bought fruit juice however we have a Sage Juicer so I will be using this in future. These are great for picky eaters and make a nice snack for adults and children.
So here is the recipe -
1 ½ Cups Juice*
4 tablespoons Gelatin (plain or vegan)
2-4 tablespoons Honey
½ teaspoon Vanilla Extract
Optional - upto 1 tablespoon Vitamin/Probiotic Powder
1 - Pour the juice into a small saucepan and sprinkle in the gelatin. Let it sit on the juice for a few minutes. You are looking for it to wrinkle on the surface and for all the white powder to be absorbed by the juice. Once the gelatin is absorbed, whisk to combine the two.
2 - Gently heat the liquid on a hob. Medium heat, we have an electric hob and I found setting 5 was perfect. Never let the liquid boil! Stir continuously and look out for the liquid to change consistency. You are looking for it to go from thick like batter to runny. The best way to test the gelatin has dissolved properly is to pop a little on your finger and rub it. If it feels grainy keep heating it.
3 - Now you can whisk in the other ingredients (Honey, Vanilla etc).
4 - Remove from the heat and pour into silicon moulds or a cake tin and refrigerate for 3 hours or until set. Test by touching the top of your jelly, if its firm, its ready :)
5 - Remove from your mould and cut into your desired size.
6 - Store in a airtight container, in the fridge for 2-3 weeks (ours are normally eaten within a week!)
Like I said earlier it really is that easy. I prefer to use less Honey and Vanilla than the recipe states but its all personal preference, and I think it will depend on the the fruit or vegetables you use. Some are naturally sweeter than others.
