Quick Hazelnut Muffins





Today's recipe is based on a Nutella Brownie recipe I stumbled across online. I've tweaked it slightly as I wanted to make muffins rather than a tray bake. And to be honest the recipe is more of a fluffy hazelnut sponge rather than a sticky gooey brownie consistency. So here goes.......

You will need -
* 12 case Muffin/Cupcake tin
* 280g Nutella or Hazelnut Spread
* 62g Plain Flour (I used Gluten Free Flour)
* 2 Medium Eggs (Supplied by my friends hens)

Pre-heat your oven to 180Âșc. Combine all the ingredients in a mixing bowl until smooth. Place 12 muffin cases in your tray and half fill with the mixture. Now you can either leave the tops plain or sprinkle a little hazelnut on top. I've done a bit of both due to baking these for family we're seeing this weekend. Cook for approximately 20-25 minutes. Prick the center to check the muffins are cooked through.  

Next time I think I'm going to add choc-chips or maybe make them with chocolate spread and add little bits of fudge/toffee? You can really mix things up and make them your own
