Healthy Apricot Flap Jack




Several years back I bought a cookbook called ‘The Healthy Heart Cookbook’ by Dawn Stock. It’s packed full of delicious recipes to help promote a healthy lifestyle and to help keep your heart in tip-top shape. The recipe I’m going to share with you is one I go back to time and time again. It’s so simple to make and super yummy.


Ingredients
Sunflower oil (for oiling)
6oz Polyunsaturated Spread
3oz Demerara Sugar
2oz Clear Honey
5oz Chopped Dried Apricots
8oz Porridge Oats
2 tsp Sesame Seeds


1 - Preheat the oven to 180oC.  Very lightly oil a shallow baking tray - 26 x 17cm.


2 - Put the spread, sugar, and honey into a small saucepan over a low heat. Continue to heat until the ingredients have melted together - Do not boil! When the ingredients are warm and combined stir in the chopped apricots, sesame seeds and oats.


3 - Spoon the mixture into the prepared baking tray and level with the back of your spoon. Cook in the preheated oven for 20-25 minutes, or until golden brown.


4 - Remove from the oven and cut into 10 bars. Leave in the tray to cool completely then remove and place in an airtight tin. Consume within 2 - 3 days.


Each bar is 293 calories. These make a great breakfast bar as they contain oats which are a fantastic source of slow release energy.
