This recipe was given to me by one of my customers. I sampled some of Mrs M's Banana bread during a visit to England, and even though it contains no fat, it tastes fantastic....!
All you need is;
- 5 Ripe Bananas (mashed)
- 2 Beaten Eggs
- 150g Brown Sugar
- 100g Sultanas
- 200g Self-raising Flour (sieved)
- A 2lb loaf tin (or similar)
Pre-heat your oven to 180oC (Fan Assisted). Simply mix together the bananas, eggs, brown sugar and sultanas. Once this is well blended, sieve in the flour and fold. When all the ingredients are mixed, spoon into a 2lb loaf tin and pop into your oven for 75 minutes. Take it out of the oven when golden and remove the loaf from the tin. Place on a rack to cool.
I think this is best served warm with a toffee sauce.....Yum!
This is a fail-proof recipe and if I can make it anyone can :-)
